Nutrition impacts everything from the sharpness of our minds to the vitality of our bodies. The food we eat influences how well we perform in school, how much muscle we build in the gym, and even our likelihood of developing conditions such as adult-onset diabetes or Alzheimer’s. It is one of the most important factors in creating a healthy society, and Concordia University, St. Paul is preparing students to address global nutrition challenges head-on through this Sport and Exercise Nutrition program.

Core Classes You’ll Take

Food Science - Dive into the science behind food, exploring methods of cooking, preservation, and the factors affecting the appearance, taste, and quality of finished food products.
Food Economics - Ever wonder how food gets from the farm to your table? This course focuses on food safety, procurement, production, and the various policies affecting our food system on local to global scales.
Medical Nutrition Therapy - Food increasingly plays a role in the way doctors heal their patients. This dives into the science of therapeutic diets, giving students insights into how to recommend dietary changes based on a patient’s unique medical and nutritional needs.
Exercise Physiology - The physiological basis for human performance and the effects of physical activity on the body’s functions are examined in theory and application. Content areas include cardiovascular and respiratory response to exercise, metabolism, body composition, temperature regulation, principles of training and conditioning, and the resulting adaptations of the human body, special populations, and exercise prescription.
