The programme

The skills-focused curriculum will enable you to build practical professional cookery experience in restaurant service, larder, hot kitchen and pastry sections, which are currently in high demand locally and internationally.

You can specialise, through self-directed learning, in the culinary fields and research that appeal to you.

There is also an academic core that runs continually throughout each semester. This will prepare you for your research proposal in Year 3 and thesis in your final year.

On graduation, you can expect to take up a position in culinary operations, food and beverage, front of house, marketing or sales.

English Language Requirements

    The TOEFL iBT ® measures your English-language abilities in an academic setting. The test has four sections (reading, listening, speaking, and writing), each with a score range of 0-30, for a total score range of 0-120.

    The IELTS – or the International English Language Test System – tests your English-language abilities (writing, listening, speaking, and reading) on a scale of 1.00–9.00.     The TOEFL®PBT is administered in a paper format and measures your ability to use and understand English in a classroom setting at the college or university level. It accurately measures how well you can listen, read and write in English while performing academic tasks.

General Requirements

  • Applicants must apply through the CAO system. 
  • Applicants must have obtained a full award. A Component Certificate is not sufficient. 
  • The best 8 modules are used for ranking purposes for a reserved quota of places on a number of courses.
  • A major award may be accumulated over more than one academic year.  In such cases it is the responsibility of the applicant to apply to QQI for a major award where courses are taken over more than one year.
  • Applicants presenting full QQI Level 5 awards will not be required to meet minimum entry requirements based on Leaving Certificate results. The QQI Level 5 award is accepted in its own right.
